Sweet ‘’trachanas’’ (frumenty) soup with tomato and feta cheese (from E. Mamalakis)

Ingredients (makes 5-6 servings)

Cooking directions:

Put the vegetable broth in a large pot and while it is still cold pour into the frumenty.

Stir well and let the mixture come to boil.

Stir in the chopped tomatoes and tomato paste.

Boil the mixture till the soup is thickened (let the pot slightly uncovered).

Add salt and boil the soup, in the meantime prepare croutons:
In a skillet, heat the olive oil, drop in the bread cubes and saute stirring constantly. Continue this process until browned.

Let them for a while to get a little bit colder.

When trachanas is thick enough, drop into the crumbled feta cheese, stir and serve in warm soup plates, sprinkle with plenty of fried chopped bread.
